The probiotics used in this dark chocolate have alpha-glucosidase inhibitory activity. The alpha-glucosidase inhibitory activity, high dietary fibre and high antioxidants in chocolate products balance blood glucose levels, especially for diabetes mellitus patients. Product intervention on Sprague Dawley diabetic rats for 3 weeks showed a decrease in blood glucose levels such as acarbose intervention. Dark chocolate probiotics intervention on healthy humans showed a slow blood glucose response compared to standard glucose. This chocolate product has a low glycemic index of 25.
