CATERING & FOOD SAMPLING
Stand Catering
The Centre Management has the exclusive rights for the sale of food and drink for consumption within the venue. On stand catering can be arranged by filling out the Catering Order Form and returning to the PCEC. All food and beverage orders must be placed 14 Days prior to the event. Late orders will incur a 20% Surcharge. Café outlets located at the rear of the exhibition halls offer a full range of take-away items.

Sampling
Food preparation and sampling is permitted but exhibitors must notify the organisers of their intent and follow the health regulations specified by the WA Health Department. Basic common sense should prevail with particular regard to the following points:

If unpackaged food is to be given away, openly stored, displayed or handled, the following facilities and services need to be provided:
  • Hand basin with hot and cold water and soap.
  • Separate double bowl sink with hot and cold water for washing serving implements or utensils, complete with liquid soap and paper towel dispensers.
  • Washable impervious floor and walls where food preparation or cooking is taking place.
  • Stands must be located with access to the appropriate service pit if power, water and drainage are required.
  • Refrigerated display and/or storage cabinet if the food is perishable.
  • Food should be protected from contamination by a glass or perspex screen or ‘sneeze’ guards, and trays with fitted covers should be used.
  • Condiments such as sauce, mustard etc are to be contained in squeeze type dispensers or in individual sealed packs.
  • All eating and drinking utensils must be disposable e.g. paper cups, plastic spoons, plastic wine glasses etc, and must not be re-used.
  • Bins must be provided and placed in suitable locations by exhibitors offering food. Such receptacles shall be located at or near the stand and the contents shall be disposed of in a manner approved by the PCEC management team.
  • Extra cleaning charges may be incurred for the disposal and cleaning of wet waste, grease, oils, etc.
Drinks should be served in disposable cups from enclosed or lidded dispensers. Milk and sugar must be in single serve packs. Milk should be single serve UHT or stored in a refrigerator. All eating and drinking utensils must be disposable and not be reused. For further information on Food Standards please visit www.foodstandards.gov.au.

Sampling
Portions should be normal tasting size only. Non alcoholic beverage samples should be no larger than 100mls. Liquor samples are to be no larger than:
  • Wine - 50mls.
  • Beer – 50mls
  • Spirits – 20mls
  • Food items should be no larger than bite size.
